Cornichons, the fancy word for gherkin pickles, is about to enter your vocabulary (and your menu) for good! Crisp texture, tart bite, small but mighty!
Cornichons are like the baby version of your regular pickled cucumbers, and they’re cute! (how often can you say that about food?). They’re made by the French company Maille, with their more than two centuries of tradition making them. These mini gherkins are hand-harvested before maturity, so they keep an extra sharp taste and a firm, crunchy texture, cured in spirit vinegar and a unique blend of spices.

Have a little taste of Maille Gherkins as an aperitif, pinch them whole with toothpicks and offer them on a plate with cheese (Gruyère fits particularly well), ham, and a glass of wine. They can also be an ingredient in steak tartar, chicken or tuna mousse or salad, deviled eggs, and even in your sandwiches! Don’t throw the brine; you can make a great Dirty Martini or Bloody Mary with it!
